Small Introduction

 Siddu a traditional and famous "Kullvi dish" is one of the most loved dishes in Kullu, Himachal Pradesh. This dish is mostly loved in Kullu, Manali, Mandi, Rohru, and Shimla. It is just a kind of bread made from wheat flour. To make Siddu you need to make a mixture of wheat, yeast, and walnut(अखरोट) or sesame(तिल), etc. After kneading wheat with yeast allow the dough to rise at least for 4 to 5 hours or wait until it rises well then cook with steaming as shown in the picture above. This is not like 'Ghujia' in taste in terms of taste and make, Ghujia is sweet and this is a salty dish, therefore, these are far away from each other in taste and even can't be compared with each other.

How do we cook

The stuffed dough is shaped into a medium half-moon (as shown in pics in this blog), and steamed until soft and fluffy. The result is a mouthwatering treat with a distinct taste and texture. The outer layer of the Siddu is light and airy, while the filling inside adds a burst of flavor.

How Siddu is served

 Now, let us know how Siddu is served to people in Kullu or in Himachal Pradesh. Traditionally, Siddu is eaten or served with Desi Ghee (Clarified Butter) but nowadays it is also served with Green Chutney (made from mint ‘Pudina’). Apart from desi ghee and chutney We also used to eat Siddu with Sauce, Milk, tea, etc. Siddu is best enjoyed hot, with a generous drizzle of desi ghee. The combination of flavors and textures in every bite is simply divine.

Tips: Jaise, 'Har chamakati hui cheez Sona nahi hoti,' or 'All the glitters is not gold.' You need to take care of a few things when choosing Siddu in Himachal. White Siddu means THE Siddu is made from 'maida' which is not healthy. Pics of Siddu shown are made from Desi Aata only therefore these are a little dark in look but healthy.

The Making of Siddu

  1. Ingredients:

    • Wheat flour
    • Water
    • Yeast
    • Walnut (optional)
    • Poppy Seeds (optional)
    • Apricot kernels (optional)
    • Sesame seeds (optional)
  2. Preparation:

    • Mix wheat flour and yeast, and either walnut or sesame seeds to create a dough. then left to ferment overnight or at least for 4-5 hours
    • Knead the dough thoroughly.
    • Allow the dough to rise for 4 to 5 hours or until it doubles in size.
    • Steam the risen dough until soft and fluffy.
  3. Flavor Profile:

    • The fermented dough develops a tangy and slightly sour flavor.
    • The outer layer is light and airy, while the filling inside adds depth.
